Peanut Butter Energy Bites
1/2 cup reduced-fat peanut butter
1/2 cup honey
1/3 cup instant non-fat powdered milk
1 tsp lemon juice
1 1/2 cup toasted oat cereal (Cheerios will work)
2/3 cup dried cranberry (you can also substitute with raisins)
2/3 cup raw hulled sunflower seeds
1. In a large bowl, mix together peanut butter, honey, powdered milk, and lemon juice. Stir in cereal, dried cranberries or raisins, and sunflower seeds.
2. Using wet hands, roll mixture into balls. Place on wax or parchment paper to set until the outside feels dry, about 30 minutes.
