Hawaiian Turkey Meatloaf
3 tbsp orange juice
5 tbsp soy sauce
3 tbsp onions chopped
3/4 green bell pepper (you can also substitute with red bell pepper)
6 slice fresh ginger (about a quarter size piece)
18 oz ground turkey
3/4 cup bread crumbs
1 egg
1 egg white
8 oz pineapple crushed, drained
2 tbsp sugar
2 tbsp white vinegar
2 tbsp onion chopped
2 tbsp green pepper chopped (you can also substitute with red bell pepper)
1 tbsp fresh ginger minced
1/4 tsp red pepper flakes crushed
2 tbsp raisin
. For Turkey Loaf
1. Preheat oven to 350 F (175 degrees C). Grease a loaf pan with non-stick cooking spray.
2. In a blender or food chopper, combine orange juice, soy sauce, 3 tablespoons onions, 3/4 peppers, and 6 slices ginger. Process until finely pureed.
3. Pour puree into a medium bowl and add turkey, bread crumbs, egg, and egg white. Blend everything well with your hands and pat it into the prepared loaf pan.
4. Bake for about 45 minutes. It should be brown on top with no trace of pink in the center. Let the loaf stand for 5-10 minutes before slicing.
. For Pineapple Chutney (prepare while Loaf is baking)
5. In a microwave safe bowl, combine pineapple with juice, sugar, vinegar, 2 tablespoons onions, 2 tablespoons peppers, 1 tablespoon ginger, and pepper flakes.
6. Microwave on high for 3-5 minutes.
7. Stir in the raisins and microwave for another minute or two. Let the chutney stand at least 5 minutes before serving.
