Crock Pot Tomato Spinach Soup
10 oz spinach washed
2 carrots medium, chopped
2 stalks celery medium, chopped
1 onion large, chopped
1 clove garlic minced
4 cup low sodium vegetable broth
1 can diced tomatoes (28 oz can)
2 bay leaf
1 tbsp dried basil
1 tsp dried oregano
1/2 tsp red pepper flakes crushed
1. Place all ingredients in a crock pot. Cover and cook on High for 5 hours or Low for 8-10 hours.
2. Remove bay leaves, stir, and serve.
