Crispy Sweet Potato Fries
2 lb sweet potato large, scrubbed
1 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper ground
1. Preheat oven to 450 degrees.
2. Half the potatoes, then cut into 1/2 inch wedges. Toss with oil, salt and pepper in medium bowl.
3. Arrange the potatoes in a single layer on a nonstick baking sheet. Bake, turning once, until browned and crisp, about 35 minutes.
