Baked Jalapeno Poppers
olive oil cooking spray
2 oz cream cheese light
1/2 cup cheddar cheese light
1 tbsp mayonnaise fat free
8 jalapeno pepper
1/4 cup egg substitute fat free
3/4 cup panko bread crumbs
1. Preheat oven to 350 degrees F (175 degrees C). Coat a large baking sheet with cooking spray.
2. In a medium bowl, mix together cream cheese, cheddar cheese, and mayonnaise. Set aside.
3. Cut jalapenos in half lengthwise and remove the seeds. Stuff jalapeno halves with cream cheese mixture.
4. Put egg substitute and and panko bread crumbs in two separate shallow dishes. Dip stuffed jalapeno halves into egg substitute, roll them in bread crumbs to coat, and place on prepared baking sheet.
5. Bake until filling is bubbly and bread crumbs are golden, about 30 minutes.
