Baked Apple and Pear Chips
2 pear firm, medium sized
2 apple any variety, medium sized
1/2 tsp cinnamon ground
6 tsp sweetener (your choice of sugar substitute)
1. Preheat oven to 325 degrees F (165 degrees C). Coat two baking sheets with nonstick cooking spray or line with parchment paper.
2. Very thinly slice pears and apples to about 1/8 inch thickness using a sharp knife, mandolin, or in a food processor fitted with the slicing blade. Mix together cinnamon and sweetener in a small bowl until thoroughly combined. Arrange fruit slices in a single layer on the prepared baking sheets and sprinkle with cinnamon mixture.
3. Bake, turning the chips over halfway through, for 30 to 45 minutes or until the chips are dried and the edges curl up.
4. Transfer to wire racks to cool. The chips will get crispier while cooling.
