Watermelon Popsicles
WATERMELON LAYER
3 cups watermelon
1/4 cup coconut milk
1/4 cup cocoa nibs (or dark chocolate chips)
COCONUT MILK LAYER
1/2 cup coconut milk
1 tsp honey
HONEYDEW LAYER
1 cup honeydew
2 tbsp coconut milk
1. Blend the watermelon and 1/2 cup coconut milk until smooth and pour the mixture into your favorite popsicle mold until it reaches about two thirds full.
2. Drop in about 6-8 nibs or chips into each mold. Place the sticks in the mold if you have a stick holder in the mold (if not just freeze for an hour until the mix is thick enough the sticks will stand independently). Freeze for 2 hours or until solid on top.
3. Blend the ingredients in the coconut milk layer until smooth and pour a thin layer on top of the watermelon layer (between 1/4 and 1/2 inch high). Freeze for an hour or until top is solid.
4. Blend the ingredients in the honeydew layer until smooth and pour unto the mold until the mold is almost full. Freeze for 2 hours or until popsicles are solid. Enjoy!
