Spinach and Mushroom Quiche
10 oz frozen spinach
1 cup mushroom sliced
1 cup artichoke heart chopped
1/2 tsp olive oil
1/2 cup fat free cottage cheese
2 tsp garlic minced
1/2 onion medium, chopped
3 egg
salt
black pepper
cooking spray
1. Preheat oven to 350 degrees.
2. Saute mushrooms and onions in olive oil with garlic. Add spinach and cook until liquid has reduced.
3. Mix vegetables with remaining ingredients, salt and pepper to taste.
4. Pour into pie dish sprayed with nonstick spray. Bake 45 minutes.
