Rainbow Vegetable Broccoli Crust Pizza
1 large head broccoli cut into florets
1/4 cup parmesan shredded
1/4 cup mozzarella shredded
2 eggs
1 tsp pepper
1 tsp salt
2 tbsp marinara sauce
1/4 cup mozzarella cheese shredded
1/4 cup cherry tomatoes
1/2 bell pepper diced
2 tbsp red onion diced
1. Preheat the oven to 400°F.
2. Process the broccoli until you get a rice-like consistency.
3. Pour the 'rice' into a microwave safe bowl and cover with plastic wrap and microwave for 2 minutes.
4. Pour the broccoli into a tea towel and wring out the excess water. It is important to get as much water out of the broccoli as possible.
5. In a mixing bowl combine the broccoli, parmesan, 1/4 cup of mozzarella, eggs, pepper and salt and mix until combined.
6. shape your pizza out of the broccoli dough on a baking sheet covered in parchment paper and bake for 15 mins.
7. Top with marinara sauce, mozzarella, tomatoes, peppers and red onion and bake for 10 minutes.
8. Serve immediately and enjoy.
