Peanut Butter Chocolate Soft Serve Ice Cream
For the ice cream
3 banana ripe
1 tbsp choice of milk (milk, almond milk or coconut milk), optional
1 tbsp peanut butter
For the chocolate shell
1/2 cup dark chocolate
1 tsp coconut oil
1. Process the ingredients for the ice cream in a blender or food processor and blend until smooth. It make take a little while but keep pulsing and it should come together into a soft serve consistency.
2. At this point you have 2 options: i) You can transfer the mixture to a piping bag and serve like soft serve or ii) you can freeze for another hour until it reaches an ice cream like consistency.
3. Melt the chocolate and coconut oil together in a microwave for 30-45 seconds, or until melted. Top each of the serves with some of the of the chocolate shell and enjoy!
