Orange Chicken with Broccoli
4 tsp canola oil
1 orange peeled and sectioned
1 lb boneless, skinless chicken breast cut crosswise into 1/2 inch strips
1 tbsp fresh ginger minced and peeled
2 cup broccoli cut into florets
1/4 cup water
1/2 cup low sodium chicken broth
1/4 cup orange juice
3 tbsp reduced-sodium soy sauce
1 tsp corn starch
1 tbsp water
1. Heat oil in a nonstick skillet over medium-high heat. Add chicken and cook for 3 minutes. Add ginger and cook for 2 more minutes or until the chicken is cooked through. Transfer to a plate and set aside.
2. In the same skillet, add broccoli and 1/4 cup water, stirring to scrape up the browned bits from the bottom of the pan. Cover and cook until the broccoli is tender-crisp, 3-4 minutes.
3. Return chicken back to the skillet. Stir in chicken broth, orange juice, and soy sauce. Mix cornstarch with 1 tablespoon water, add to the pan and cook, stirring frequently, until the sauce comes to a boil and thickens slightly. Add orange sections and cook until heated through.
