Healthy Red Power Pancakes

Ingredients

1 1/3 cup almond milk
2/3 cup greek yogurt
2 eggs
1 tbsp vanilla
2 tbsp coconut oil
1 large roasted beet puréed
1 1/3 cup flour
2/3 cup oat flour (rolled oats food processed)
2 tsp baking powder
2 tbsp coconut sugar
coconut oil for pan frying

Directions

1. Combine the wet ingredients and stir well until all combined.
2. Add the flour, oat flour, baking powder and coconut sugar and stir until blended. Let sit for 5 minutes.
3. Coat a pan with a little coconut oil and spoon enough mixture for desired size onto the pan. When you see bubbles covering the top of the pancakes flip them and cook for 1 1/2 mins.
4. Serve with berries, greek yogurt, maple syrup or honey.
