Healthy Orange Chicken Soup
1 tbsp olive oil
2 tbsp lemon juice
salt, pepper and parsley to garnish
1 medium onion chopped
2 cloves garlic minced
2 skinless boneless chicken breasts cubed
3 tsp ground cumin
3 tsp ground coriander
1 orange zest and juice
1 1/2 cups cooked chickpeas
1 1/2 cups diced tomatoes
4 cups chicken or vegetable broth
1. Heat oil in a large pot over medium heat and add the garlic and onion and sauté for 3 minutes or until soft.
2. Add the chicken, coriander and cumin, orange juice and zest, chickpeas, tomatoes and stock and bring to a boil.
3. Reduce heat and simmer for 20 minutes
4. Add lemon juice and season to taste.
. Serve topped with fresh parsley, salt and pepper.
