Coconut Banana Oatmeal Cookies
1 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
2 tbsp unsalted butter melted
1/2 cup white sugar
1/2 cup brown sugar
1 banana very ripe
1 egg
1 tsp vanilla extract
1 1/2 cup old-fashioned oatmeal
1 cup unsweetened coconut shredded
1. Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
2. Stir together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
3. In a large bowl, beat together white sugar, brown sugar, banana, egg, and vanilla extract with an electric mixer until thoroughly blended. Mix in dry ingredients just until combined. Stir in oatmeal and coconut. Drop dough by the tablespoonful onto prepared baking sheets.
4. Bake for 11 to 14 minutes or until golden brown. Allow cookies to cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
