Avocado Toast with Poached Egg
1 tsp champagne vinegar (or white vinegar)
1 slice whole wheat bread
1/2 tsp salt
1 1/2 tsp lemon juice
1/2 tsp cayenne pepper
1 tsp chive flowers (or regular chives)
1/2 tsp pepper

1. Fill a pot with water and bring to a boil. Add the vinegar to the boiling water. Using a spoon or whisk circle the water to create a vortex in the centre. Gently place the egg in the centre of the vortex. Reduce heat and gently simmer for 2.5 minutes (for a runny yolk). While the egg is cooking toast the bread.
2. Smear the avocado on the toast and top with salt then lemon juice. Place egg on top then cayenne pepper, chive flowers and black pepper to taste.
